The vibrant and versatile taste of game-meat, fish, berries and mushrooms comes like a gift from nature that locals have been taking care of with hard work, love and respect. The indigenous people of Lapland, the Sámi, have their roots in the last European wilderness. They produce natural meat from animals that live in the forest, on the tundra and its mountain terrain. It’s in the Sámi’s cultural heritage to always treat animals with highest ethical standards and let them thrive in nature. Wild nordic animals eat only what nature provides, they are not raised with pellets or treated with hormones and antibiotics and they have almost zero effect on the environment compared to mass animal farming practices. The nordic Scandinavian region’s brackish sea water and fresh-water rivers give superior quality fish and the unique nordic caviar from the Bothnian bay, one of the most frequently served nordic delicatessen at the traditional Nobel Price dinner in Stockholm. The wild salmon from the Bothnian Bay is known as ‘Baltic blonde salmon’ because of its very pale pink colour that it gets from a steady natural diet of small light-coloured fish and which is its hallmark of quality. Because it was allowed to develop its taste in its natural environment, the flesh is lean and delicious as well as highly nutritious. Nordic forests abound with mushrooms, and the yellow or golden short-stemmed chanterelles are full of vitamins and simply delicious. And nowhere else grow so many wild berries such as the lingonberry, cloudberry and arctic raspberry – all intensely nutritious from the day and night-long sun during summer.
